Remembered some more:

Sophie Ellis-Bextor covered Olivia Newton-John's Physical as a hidden track on her album "Shoot from the Hip" (tacked onto "Hello Hello" after minutes of silence). Added in the meantime

She also covered Cher's "Take Me Home" on her album "Read My Lips". Rejected

Frou Frou covered Bonnie Tyler's Holding Out for a Hero on the Shrek 2 soundtrack. Added in the meantime

Simon & Garfunkel covered the Paul Simon composed song "Red Rubber Ball" which was first recorded by The Circle. The live track is part of the "Old Friends" box set on disc 2 and includes chatter about the fact that The Circle recorded the song first and managed to sell 890,000 copies. =) Added in the meantime

They also covered Blues Run the Game by Jackson C Frank, as found Old Friends disc 1.

They also covered That Silver Haired Daddy of Mine by Gene Autrey, as found on Old Friends Disc 3.

They also covered "Anji" by Davy Graham, as found on Old Friends Disc 1.

I've got the albums here - I can link to any number of web sites that would confirm this.  Just let me know what's most helpful to you. =)
